Introducing: The Georgian Supra
Six dishes from one of the world's oldest food cultures — walnut-rich, herb-stuffed, fermented

We just opened the Georgian Supra cuisine on the site. Georgia (the country, in the Caucasus) has been making wine for 8,000 years and pkhali — walnut-and-herb spreads — for at least that long. The Supra (literally, "tablecloth") is the central social-eating ritual: 15-20 small herbal, fermented, walnut-thickened dishes shared at one table over hours.
From a longevity lens this hits hard: walnut-dense (urolithin-A precursor), fermented vegetables (gut microbiome), wild herbs by the handful, low refined sugar by tradition. Six dishes that teach you the architecture.
In this issue

Ancient Georgian Churchkhela: Apricot & Walnut Candles
These chewy, sun-dried strands are a modernized take on the Georgian Supra tradition, replacing refined sugar with the natural sweetness of ripe apricots and thickening the broth with nutrient-dense almond flour instead of white starch. The result is a fiber-rich, polyphenol-packed treat that honors the 'candle' aesthetic while delivering sustained energy from healthy fats and whole fruit.

Farm-Fresh Adjaruli Khachapuri: The Molten Cheese Boat
This Georgian classic features a rustic, hand-kneaded dough shaped into a boat, filled with a blend of grass-fed cheeses that melt into a molten river, and crowned with a pasture-raised egg and a pat of cold butter. Baked until the crust is golden and the center is bubbling, it is a comforting, nutrient-dense meal that honors the Supra tradition without refined sugars or seed oils. The result is a savory, rich, and deeply satisfying dish where the quality of the dairy and the freshness of the herbs shine.
82g proteinGrass-Fed Beef & Red Lentil Kharcho Stew
A hearty Georgian stew featuring grass-fed beef and red lentils simmered in a rich, orange-hued broth thickened with ground walnuts. The flavor profile is savory and deeply aromatic, balanced by the natural tartness of sour plums and brightened with fresh coriander.
47g proteinGeorgian Khinkali with Grass-Fed Beef & Pastured Pork
These large, hand-folded dumplings feature a savory broth-filled center made from a blend of grass-fed beef and pastured pork, encased in a springy, wheat-alkaline dough. Served piping hot with a sharp garlic-vinegar dip and a fresh herb salad, this dish honors the Georgian Supra tradition while strictly adhering to clean, unrefined fat and sugar protocols.

Georgian Supra Mint & Barley Kvass
A refreshing, effervescent fermented barley water rooted in Georgian tradition, revitalized with fresh mint and naturally sweetened with whole dates. This probiotic-rich drink offers a crisp, slightly tangy finish that aids digestion and hydrates the body with polyphenol-dense ingredients, perfect for concluding a Supra feast.

Roasted Beetroot & Walnut Pkhali (Georgian Supra Tradition)
A vibrant, earthy spread featuring roasted organic beets bound with crushed raw walnuts, fresh coriander, and pungent garlic. This dish delivers a savory, umami-rich texture without refined fats or sugars, honoring the Georgian supra table while prioritizing longevity nutrition.
If you can find adjika (the Georgian fermented chili paste), it's the closest thing to a single ingredient that captures the cuisine. Worth seeking out.
