We just opened the Georgian Supra cuisine on the site. Georgia (the country, in the Caucasus) has been making wine for 8,000 years and pkhali — walnut-and-herb spreads — for at least that long. The Supra (literally, "tablecloth") is the central social-eating ritual: 15-20 small herbal, fermented, walnut-thickened dishes shared at one table over hours.

From a longevity lens this hits hard: walnut-dense (urolithin-A precursor), fermented vegetables (gut microbiome), wild herbs by the handful, low refined sugar by tradition. Six dishes that teach you the architecture.
